Paralytic Pavlova - Sample sunday cook off

Grace stood in her kitchen, out the window she could see Ellie, a year old today, playing on the lawn with her Dad.  Grace felt a pang of emptiness, she wished her Mum could have been around to see this day.  She had Ellie's little friends from Mother and Toddlers group coming over shortly, but she did just have enough time to knock up her Mum's favourite dessert, in memory of her today.

4 Egg whites
8 oz of Caster sugar
1 tsp of Vanilla Essence
1 tsp of Distilled Vinegar
2 tsp of Cornflour

1/2 pint of Double Cream
Cointreau
Mandarins or Orange segments

After weighing the ingredients, Grace beat the eggs whites until the peaks where stiff and shiny. She then slowly incorporated the caster sugar, a little at a time until the mixture came back to the stiff and shiny state, and soft peaks could be easily formed. With a metal spoon, she carefully incorporated the vanilla essence, vinegar and cornflour, giving it a quick blast with the whisk before she put it onto a baking parchment lined tray.

She spooned out the mixture into a circle,  she then piled the edges, creating a nest effect. When this was done, she popped it into the over on about 130oc / gas mark 1 and she would be able to leave it there until the party finished in a 2 hours time.

Glancing up at the clock Grace decided to quickly mix the cream mixture together, and then leave it in the fridge & all would be need was to decorate it, once the detritus of the party had been cleared up. Grace mixed the cream until it was very hard, she then slowly whisked in a good measure of Cointreau, adjusting to suit her taste, until the mixture was soft and silky again.

 Putting the bowls in the dishwasher and wiping the surfaces, she called Ellie and her husband, Tim, in from the garden to clean up before the party started.

Vowing to herself that the next day, they would drive down and put some flowers on her Mum's grave but tonight honour her memory with this Paralytic Pavlova.
